Bamberger Ranch

On Friday my class took a field trip to a working Texas Ranch that practices ecologically sound agriculture. We learned about water issues in Texas, and other fun stuff. It was really cool.
The ranch is also home to a herd of Oryx. These are extinct in the wild in Africa, but can live in Texas. They breed these guys to go live in zoos. Here is a couple and their little baby (on the left). 
After an exhausting three hour tour, we all went out to lunch at THE BBQ, of ALL bbq's- THE SALT LICK. Here is their main grilling pit, where one might easy grill a man whole. 
And the end result- A plate of brisket and pork ribs with a side of 'fixin's' Hmmmm. Pretty yummy. A little heavy on the meat for me, but "when in Rome," I guess.

I've always wanted a pit where I could grill a man whole.

What is the "fixin" on top of the coleslaw in the picture? Just curious.

texas style potato salad. it also came with a whole plate of pickles and raw onions (not shown)!
